Step 1
In small bowl combine oil, rosemary, sage, garlic, fennel seed, and lemon juice. Set aside.
Step 2
Pat duck dry with paper towels and season generously all over with salt. Butterfly, cutting breast along thickest side, stopping 3/4 inch short of other side. Open like a book and smear filling evenly over inside if breast.
Step 3
Lay bacon slices on cutting board; place opened breast on top. Roll together and secure with toothpicks. Place in 9x13 baking dish. Can be refrigerated up to 2 days.
Step 4
Preheat oven to 325°F. (Let refrigerated breasts sit at room temperature for 30 minutes.) Roast 50-60 minutes. Let rest 20 minutes. Remove toothpicks, slice, and serve.
