Instructions
Step 1
Cook rice according to package instructions or in a rice cooker.
Step 2
Preheat the oven to 375°F (191°C).

Step 3
Prepare a sheet pan with aluminum foil and spray with non-stick spray. Add the tofu to the pan and spray with non-stick spray. Sprinkle over top the tofu the garlic powder, ground cumin, and sea salt. Mix well.
Step 4
Add the cauliflower, broccoli, and edamame to the opposite side of the pan and drizzle olive oil over top. Sprinkle the remaining garlic powder, and sea salt. Mix everything well.
Step 5
Roast for 20 minutes, and then take out of the oven to stir the vegetables around. Place back in the oven and roast for another 20 minutes or until the cauliflower is tender.
Step 6
Place on a plate and enjoy!
