Instructions

Step 1
Chop aubergine, courgette, spinach and pepper and roast for 20-30 mins
Step 2
Bring water, rice, chopped tomatoes, and seasonings to the boil, then cover and put on a low heat for 15-20 minutes.
Step 3
Fry quorn and sundried tomatoes in oil for about 10 minutes until cooked.
Step 4
stir rice into the quorn, and then add roasted vegetables.
Step 5
Done. Good job!
