375gpork tenderloin
cubed
1 TbspStir-Fry Seasoning
+ 2 tsp, Asian, or Sesame Ginger Dressing Mix
2 tspsesame oil
2 Tbspall-natural peanut butter
¼ cuplight coconut milk
1 Tbsplow-sodium soy sauce
250grice noodles
2 cupscucumber
sliced into ribbons
2 cupsmatchstick carrots
1 bunchcilantro
chopped
1lime
cut into wedges

Step 1
Preparation
Step 2
Preheat oven to 400° F.
Step 3
Place pork tenderloin in an oven-safe dish and top with seasoning. Cook for 17–20 min.
Step 4
While pork is cooking, combine all sauce in a small mixing bowl. Set aside.
Step 5
Prep veggies while cooking rice noodles according to package directions.
Step 6
Run cooked noodles under cold water to help noodles set; toss with satay sauce.
Step 7
Slice pork and assemble with noodles and veggies in 4 serving bowls. Enjoy!
