Instructions
Step 1
Cut your potatoes and onion

Add some oil to your instant pot and add the onion with some salt and pepper

Sauté the onion until translucent (it will take about 5 minutes)

Then add the minced garlic and a tbsp of butter and stir for a minute

Then add the chicken broth and potatoes
Step 6
Seal the instant pot and cook on high pressure for 8 minutes
Step 7
After 8 minutes, release the steam

If you have an immersion blender, blend the soup until it reaches your desired texture
Step 9
Mix your heavy cream with the corn starch then add the slurry to your soup and stir
Step 10
Add the cheddar cheese, Greek yogurt, corn, more salt and pepper
Step 11
Once the soup is your desired flavor and thickness, serve with more cheese and green onion!
