Instructions

Step 1
Put the lentils in a medium-sized pan and add 300ml of cold water. Bring the pan to a boil on high heat. Turn down to low heat and simmer until the lentils are soft (15-20 minutes).
Step 2
Add the ground spices, garlic and tomatoes and simmer for a further 5 minutes.
Step 3
Check the seasoning. Stir through most of the fresh coriander, reserving a little to garnish. Serve.
