Step 1
Set oven to gas 4
Step 2
Fry leek, onion, carrot in the butter until soft
Step 3
Add marmite, tomato puree and hot water, simmer for a minute or two
Step 4
In large bowl, combine leek mixture, nuts, cheese in large bowl. Add breadcrumbs, herbs, pepper and combine.
Step 5
Add egg and combine again. Tip into small loaf tin lined with non-stick foil, press down firmly (should all fit).
Step 6
Bake in oven for 45-50 mins. Cover with foil if top is browning too quickly. Check with sharp knife - should be clean.
Step 7
Rest for 10 mins before serving
Step 8
Serve with usual roast dinner carbs and veg, with red wine and onion gravy. Or bread sauce.
