Instructions
Step 1
Slice onions with a mandoline.


Step 2
Melt butter over medium heat in a pot. Add onions and a heavy pinch of salt. Add lid for 5 minutes.


Step 3
Remove lid and stir onions every 5 minutes until golden brown.
Step 4
Add flour and cook for 1 minute.

Step 5
Add balsamico, veggie stock, worcester and soy sauce. The soup should look richly brown. Simmer for 10 minutes. Add more stock or water if needed. Taste for seasoning.





Step 6
Preheat oven to 200℃

Step 7
In broiler safe bowls, ladie the soup and put baguette on top and drizzle shredded cheese. Heat in oven until browned.
