Air Fryer Tostones: from green to golden crunchy delights

Tostones are slices of unripe, green plantains fried until crispy. This recipe makes healthier Tostones, a crispy and delicious alternative to traditional deep-fried plantain chips. These tostones are made using just a fraction of the oil and are a great snack, a side dish for any meal, or a party! They are crispy on the outside and soft on the inside, with just the right amount of salt to enhance their natural sweetness. Plus, they are so easy to make in the Air Fryer that you can have them ready quickly! We'll show two toppings to serve with: chicken and black beans.

For the Chicken topping:
500gChicken Breast

himalayan salt

1 ¾ cupstomato sauce

Step 1
I strongly recommend watching the video for visual instructions.
Step 2
Let's start with the toppings. In a medium pot bring 2 L of water to boil with the bay leaf, garlic clove, and tsp of salt. Once bubbling, add the 500 g of chopped chicken breast and boil for 10 min. Once ready shred the chicken in a medium bowl with a hand mixer or with your hands.
Step 3
In a medium-pan simmer the shredded chicken for about 5 min in the tomato sauce, add salt and black paper to taste. Ideally will be using homemade tomato sauce but you can use the can version and it will work just fine. When ready add the cilantro leaves cover and set aside.
Step 4
In a small pot, pour the can of black beans with all of its liquid, add the tomato sauce, smoked paprika, cumin, salt, pepper, and oregano, and let it boil at medium heat. Once it boils, lower the heat to low and let it simmer for a couple of minutes.
Step 5
Let's prepare the tostones. To peel green plantains, start by cutting off both ends of the plantains using a sharp knife. Score the plantain lengthwise along its backside, using your hands gently pry or remove the skin. The skin should come off easily.
Step 6
Cut the plantains into pieces about an inch in size, you can use two fingers as a guide for this cut. Spray a little oil, add some salt, and mix well.
Step 7
Arrange them evenly on the air fryer rack and cook at 350F for 15 minutes flipping them over at half time. They should be easily pierced with the tip of a knife
Step 8
Time o smash the plantains! You can use any flat surface that is easy to handle, such as a cup or a small plate, as long as it is flat. I used a one-cup measuring cup. Since my cup is made of metal, I didn't need to use any non-stick material like parchment paper or a paper bag. However, it's a good idea to use them if you find that the plantain is sticking to the surface you are using to smash it. Spray them with olive oil, and add salt on both sides.
Step 9
Return the smashed plantains to the air fryer basket. Try not to stack the smashed plantains. For better results, consider working in batches depending on the size of your basket. Lightly spray or brush some olive oil and cook for 4 minutes at 350F, flip, and cook for 4 more minutes until golden, crunchy, and delicious.
Step 10
Tost your tostones with a pinch of salt and serve with your toppings. We served the chicken with avocado and sour cream, black beans with avocado and sour cream, and avocado and shredded cheese. So yummy!
