Instructions

Step 1
Potatoes: Toss the peeled & cubed potatoes in the oil and spices and lay out in an even layer on a baking sheet. Bake at 400' for 15-20 minutes, tossing once halfway through
Step 2
Chorizo Meatballs: Use a small scoop to make 12 meatballs out of the chorizo. Roll into balls with hands and place on a lined baking sheet. Bake at the same time as the potaotes for 20 minutes or until completely cooked through
Step 3
Assembly: Once all the components are cooled, put the spinach in the base of the container and place the egg halves on top of it
Step 4
Then add in the roasted sweet potatoes and chorizo meatballs in the container. Let cool completely before storing in the fridge
