Step 1
in instant pot, put a good amount of olive oil, add bell pepper, onion and garlic, saute until soft and translucent. turn off saute.
Step 2
add rinsed beans, cauliflower, chilis, spices, 2 cups broth, lay chicken on top. pressure cook for 15 minutes, natural release for 5-10 minutes.
Step 3
carefully quick release- beans add lots of pressure. remove and shred chicken. put back in pot. top off with more broth. serve.
