Step 1
Spread the mashed avocado on the tortilla. Place chicken on the bottom half of the tortilla and sprinkle with the cheese. Fold the top half of the tortilla over the bottom and press to adhere.
Step 2
Heat the canola oil in a small skillet over medium-high heat. Add the quesadilla and cook until lightly brownies on the first side, 30 seconds to 1 minute. Carefully flip and cook until the second side is lightly browned and the cheese has melted. Transfer to a paper towel to blot any excess oil. Cool and cut into bites or strips.
