Instructions
Step 1
Heat oil in a skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 4-5 minutes. Transfer out of pan and set aside.

Mix chicken, pineapple, beans, cilantro, green onions, cumin, red pepper, ¼ tsp salt, and mozzarella in a bowl.
Step 3
To assemble quesadillas, spread filling over half of a tortilla. Fold in half and coat with cooking spray.
Step 4
Heat a skillet over medium heat. When hot, add quesadillas and season both sides with salt to taste. Cook until browned and cheese is melted, about 1-2 minutes per side.
Step 5
To serve, cut into wedges.
