Step 1
Cut chorizo into fine slices
Step 2
Chop chicken thigh into halves portions and season with salt and pepper

Sear chicken until golden brown but not cooked through. Remove chicken from pan and set aside

Place finely chopped garlic, onion and chorizo into pan. Stir for 1-2 mins
Step 5
Add rice and stir until coated in oil
Step 6
Add chicken stock, canned tomatoes, and paprika. Stir gently to mix and bring to simmer
Step 7
Allow paella to simmer, then place chicken into the pan, mostly submerged
Step 8
Cook without stirring for 10 mins. At the 7 min mark, take off the lid for the final 3 mins
Step 9
Cook for further 5 mins until most of the liquid is absorbed
Step 10
Remove from heat and let stand for 5 mins
