Instructions
Step 1
Preheat the oven to 350º.
Step 2
Bring a large saucepan of salted water to boil.
Step 3
Finely chop garlic.
Step 4
Zest lemon.
Step 5
Pick basil leaves, tear into small pieces.
Step 6
Finely grate parmesan.
Step 7
Place pine nuts on a foil lined pan in a single layer, toast 2-3 mins.

Melt butter on medium heat.
Step 9
Add garlic, cook 2 mins until fragrant.
Step 10
Sprinkle in flour, cook for about 1 min until toasted.
Step 11
Whisk in mascarpone, lemon zest, ¾ cup water, and a pinch of salt and pepper.

Simmer 2 mins, stirring occasionally.
Step 13
Add spinach and basil leaves, stirring until wilted. Cover to keep warm.
Step 14
Add gnocchi to boiling water. Cook 2-3 mins until most of the gnocchi float.

Reserve 2 Tbsp cooking water, drain gnocchi.
Step 16
Switch the oven to broil.
Step 17
Add gnocchi, cooking water, and half the parmesan to the sauce, stir to combine.
Step 18
Sprinkle remaining parmesan on top.

Broil for about 5 mins until golden and bubbling.
Step 20
Top with pine nuts and serve.
