Instructions
Step 1
Place green and ripe plantains in a pot of salted water and boil until they are soft, approximately 20 minutes. Drain.
Step 2
Puree whilst still warm, adding water to keep the consistency of porridge and set aside.
Step 3
Place coconut milk, onion, garlic, habanero and basil in a stockpot and bring to a gentle simmer, stirring occasionally for 15-20 minutes.
Step 4
Add snapper fillets to the coconut broth and continue to simmer until the fish is cooked.
Step 5
Add salt to taste.
Step 6
Drop spoonful's of puree into a bowl of hot soup.
