Ingredients

1 cartonchicken broth low sodium
½ cupoil-packed sun-dried tomatoes
oil drained
2 tspitalian seasoning
1 Tbspminced garlic
½ tspred pepper flakes
salt
freshly ground black pepper
1 lbboneless skinless chicken breasts
cut into 1-inch cubes
12 ozcampanelle pasta
uncooked
5 ozfresh baby spinach
8 ozlight cream cheese
cut into cubes and softened
1 cupfinely shredded parmesan cheese
¼ cupfresh basil
chopped
½ cupheavy cream
Instructions
Step 1
In an instant pot, stir together broth, tomatoes, Italian seasoning, garlic, red peppers, 1 tsp salt, and pepper.
Step 2
Stir in chicken and pasta.
Step 3
Secure the lid in place, and be sure the pressure valve is set to "sealing" position. Select the "manual" setting or high pressure and set it to 5 minutes.
Step 4
After the time is up select cancel then use the quick release method to release pressure.
Step 5
Open the lid when done and stir noodles to separate then stir in spinach, light cream cheese, and parmesan.
Step 6
Toss well. Let rest for 5-10 minutes on "saute" to thicken. Toss in basil just before serving and serve warm. Enjoy!
