Instructions
Step 1
Remove seeds and set aside.
Carefully remove membrane from citrus fruit meat and very finely slice citrus (including skin)
Put citrus in a pot and add sugar
Step 2
Put the seeds in a fabric pouch and put in pot. It will provide pectin, a natural gelling agent.
Step 3
Split vanilla pod and add. Cook over very low heat. Cook until citrus juice has almost completely evaporated and skin becomes translucent.
Step 4
Fill into jars while still very hot. Close the jars and flip them over to let the air out.
Set aside a day before enjoying.
