Instructions

Step 1
Chop the chorizo into bite- sized chunks. Heat a frying pan over a medium heat and add the chorizo to the pan. Fry the chunks for 2-3 minutes until they start to brown and release fat. Add the onion, pepper and garlic and fry for 8-10 minutes until they start to soften.
Step 2
Pour 175ml of water into the pan along with the half stock cube, chopped tomatoes, cajun seasoning and rice and stir everything together. Add the cod fillet to the pan, reduce the heat and cover with a lid. Leave it to simmer for 20-25 minutes until the water has been absorbed and the rice is cooked. Gently flake the cod into the mixture and stir to combine. Season to taste.
