Step 1
Chop chorizo into bite sized chunks and heat in frying pan until fat released
Step 2
After 2-3 mins, add onion, pepper and garlic and fry for 8-10mins
Step 3
Pour 175ml of water into pan with 1/2 stock cube, chopped tomatoes, Cajun seasoning and rice and stir together
Step 4
Cook chicken in oven and flake when ready
Step 5
Place lid on pan and simmer for 20mins
Step 6
Add flaked chicken and simmer for further 5mins then serve
