8 ozcream cheese
softened
0.5 Cupsalted butter
softened
0.5 Cuperythritol
45gsugar-free chocolate chips
0.5 Cuppeanut butter
crunchy
2 ½ tspvanilla extract
Coating
Instructions
Step 1
Blend all ingredients in a mixer or with a hand-held mixture until creamy. Then cover the bowl and place in the fridge for 1 hour.
Step 2
Then scoop out the mixture into little balls using a spoon or cookie scoop (23g per fat bomb). Place them on a cookie sheet in the freezer for 20 mins.
Step 3
In a small shallow bowl microwave the chocolate coating for 30 seconds at a time, stirring every 30 seconds until melted and smooth.
Step 4
Take each fat bomb and dip the top of the fat bomb in the chocolate coating. Return the fat bombs to the freezer for 30 mins. Remove and place in a Ziplock bag.
Step 5
Store them in the freezer.
