Potato Soup (Kathy's)

Can be cream of potato soup. If this is desired, fill water just to top of potatoes - not 2 inches above. Once cooked, mash the potatoes and add milk or half and half - up to around 2 inches above (where the water would have been). Keep heat low until soup is smooth and milk is up to temp.

Instructions
Step 1
Saute onion with salt and pepper in butter in large stock pot until just starting to soften

Step 2
Add potatoes and coat well with butter. Add additional salt and pepper if desired.

Step 3
Add water until it is 2 inches above potatoes. Bring to a boil. Reduce to a simmer and cook about 30 minutes. Taste and adjust salt and pepper as necessary.
