Chili-Lime Chicken
Marinade

1 Tbspolive oil

1lime
juice and zest of

½ tspsugar

½ tspchili powder

¼ tsppaprika

¼ tspgarlic powder

¼ tspsea salt

black pepper
Junkyard Fries

19 ozsweet potatoes
raw
¾ cupmozzarella cheese shredded non-fat

2 slicesturkey bacon

1Jalapeno
chopped, optional

chives
for garnish

Instructions
Step 1
Add chicken and onions to a crock pot. Combine all marinade ingredients together in a bowl and then pour over the chicken and onions. Cook on low for 4 hours.
Step 2
Preheat oven to 425 degrees. Slice the sweet potatoes into fries. Spread fries out in a single layer onto a baking sheet lined with parchment paper. Spray tops with cooking spray and sprinkle with sea salt. Bake for 20 minutes.
Step 3
Flip and return fries to oven. Bake for another 15 minutes.
Step 4
Chop the bacon and cook in a greased frying pan over medium / high heat. Cook until crispy. Remove from heat and set aside.
Step 5
Top the sweet potato fries with shredded Chili-Limi chicken and cheese. Return to the oven and cook for 5 minutes until the cheese is melted.
Step 6
Split into equal portions and top each serving with 1/2 slice of crumbled bacon, jalapenos, chives and fry sauce. Enjoy warm with a fork.
