A perfect blend of moist chocolate cake and raspberry cream, topped with crushed Oreos and “watered” with cold brew cream! This was fun to make and eat, it would be perfect for kids or parties!

0.25 boxchocolate cake mix

Instructions
Step 1
Start by combining your milk, vanilla, cocoa powder, espresso powder, butter, eggs, and chocolate cake mix. Transfer mixture to a parchment-lined mini cupcake pan and bake at 300f for 30min.
Step 2
Make your cold brew cream by whisking together the condensed milk, evaporated milk, and cold brew. Set aside.
Step 3
For the raspberry cream, start with creaming your cream cheese, sugar, and raspberry powder until fluffy. Gradually add the heavy cream until and after it’s well incorporated, increase the speed and continue to beat until stiff peaks are formed.
Step 4
To assemble, start with placing the mini chocolate cake in a cleaned 2.5inch terracota pot, followed by a 1/4 cup of the raspberry cream, and top with the crushed Oreos to make it look like dirt. To make it look like a plant, place an herb on top and “water” with the cold brew cream before serving. Enjoy!
