I’m obsessed with bagel sandwiches and with egg muffin cups so I combined them; sort of! This is an easy make ahead breakfast, store in the fridge and have an easy and delicious breakfast all week!

Step 1
Preheat oven to 350°
Step 2
Sautée the peppers, mushrooms, and spinach in the oil until soft.

In a bowl mix the veggies and all other ingredients
Step 4
Spray a donut pan with nonstick spray
Step 5
Pour the egg mixture into the donut pan
Step 6
Bake for 15 minutes
Step 7
Let cool and store in the fridge up to a week
Step 8
When you’re ready to eat, microwave 30 seconds and add to a toasted bagel
