Instructions

Step 1
Preheat oven to 180 degrees Celsius. Oil and line a muffin tray with baking paper.
Step 2
In a bowl, combine the zucchini, butter, salt and pepper.
Step 3
Add the eggs and mix well.
Step 4
Add the chopped spinach, basil and shallots and continue to stir. Add the dry ingredients and stir until combined.
Step 5
Evenly divide the mixture into each section of the muffin tray, filling completely as the muffins will not rise too much.
Step 6
Bake for 25 minutes or until the muffins are golden.
