Instructions

Step 1
In a medium frying pan, heat 10 ml oil over a medium-high heat, then fry the onions and garlic for 5-10 mins or until the onions become translucent. Add all the dry seasoning, mix well and add the scotch bonnet pepper, chickpeas and carrots. Then add the stock, chopped tomatoes and simmer for 40 minutes.
Step 2
Add the okra and simmer for a further 5 minutes.
Step 3
Serve stew in medium bowls. with rice, pasta or couscous.
