225gunsalted butter
softened
150glight brown sugar
75gsugar

1 tspvanilla extract
270gplain flour
1 tspbicarbonate of soda
1 tspsalt
200gchocolate chips
20gchocolate chips
for the top
Caramel
Instructions
Step 1
Whisk butter and sugars together until light and fluffy
Step 2
Mix in vanilla and eggs
Step 3
Add flour, bicarb and salt. Fold until combined
Step 4
Fold in chocolate chips
Step 5
Add 1/2 the mix into lined baking tray
Step 6
Heat all caramel ingredients on medium heat until small bubbles form
Step 7
Drop a small bit of the caramel into cold water. If it falls a small ball it is done
Step 8
Pour caramel over cookie mix
Step 9
Add the rest of the cookie mix over the top. Sprinkle over the last chocolate chips
Step 10
Bake in the oven at 160 for 25 mins
