Step 1
1.Melt the butter in a small pot, then add the garlic; cook for about 3 minutes over medium heat until golden brown. Then, add the carrots and cook all together for another 3 minutes.

2.Raise the heat to high, then add the honey and the liquids : orange juice with zest, chicken stock, apple cider. Stir it all together, bring everything to a boil, then reduce the heat to low; cover and simmer for about 20-30 minutes (or until the carrots are soft).
Step 3
3.Remove the pot from the heat, and add all the seasonings: salt, pepper, cinnamon, clove, nutmeg. Blend everything together (immersion blender or regular blender works great), and cook the blended soup over medium heat for about 15 minutes, stirring occasionally.
Step 4
4.Serve in a bowl with your favorite soup toppings.
