Instructions
Step 1
Preheat the oven to 220°C and line a sheet pan with baking sheet.
Step 2
Wash the potatoes, peel and cut into 1/2 inch cubes, then soak them in cold water to get rid of the starch for 10 minutes, drain and place the potatoes on the prepared baking sheet in one layer, drizzle 2 tablespoon of olive oil on top and season with salt.
Step 3
Roast until the potatoes reach a golden brown color and crisp, about 20 to 30 minutes, flipping halfway through.
Step 4
Heat 2 tablespoon olive oil in a large pan, add the garlic, half the amount of the crushed red pepper & coriander seeds, then Sauté for 2 mins until the garlic is fragrant and golden in color, add half of the cilantro, stir for 30 seconds, drizzle 2 tablespoons of lemon juice, toss generally then remove from heat and set aside.
Step 5
Once the potatoes are roasted, pour the garlic mixture on top of the potatoes and toss with the remaining of lemon juice, chopped cilantro, red pepper flakes, and serve hot.
