Instructions
Step 1
Preheat oven to 450F. Place sweet potatoes on a baking sheet, bake for 45 minutes or until fully cooked and tender. Allow to cool the peel the skin off.
Step 2
Place the sweet potato flesh in a baking dish (14.5x 11 x 2) or smaller for a thicker casserole. Mash the sweet potatoes in the baking dish then add the heavy cream, sugar or honey, eggs, cinnamon, salt and vanilla. Mix well using a spatula then spread it out on the pan. Mixture does not need to be smooth, some lumps are ok.
Step 3
In a small bowl mix the flour, brown sugar and cinnamon. NOTE: You can add the melted butter and mix OR thinly slice the butter to add on top of the finished casserole. Sprinkle the mixture all over the sweet potato. Bake at 350F until golden brown , for 35-40 minutes.
