This recipe is so quick and delicious. It’s my go-to, to replace sour cream in burritos and tacos. It gives that extra gooeyness (what do you mean this is not a word 🤭) and binds all the components of the meal together nicely. This cashew queso tastes so good I promise you won’t miss the dairy!

Ingredients
6 servings
½ cupcashews
1chipotle in adobo
+ 1 tbsp sauce
½ cupsoy milk
or another plant milk
2 Tbspnutritional yeast
½ tspsalt
Instructions
Step 1
Soak the cashew in boiling water for 30 minutes
Step 2
In a small high-speed blender, add all the ingredients, and blend until smooth
Step 3
Add more milk if necessary, 1 tbsp at a time
