Cappuccino Muffins
Got this recipe from the mother of an intern who worked at my husband's company years ago. It's the best coffee-flavored muffin I've ever tasted!

Instructions
Step 1
Combine espresso spread ingredients; mix until smooth and well-blended. Cover and set aside until serving.
Step 2
In a bowl, combine flour, sugar, baking powder, cinnamon and salt.
Step 3
In another bowl, stir milk and coffee granules until the coffee is dissolved. Add margarine, egg and vanilla. Mix well. Stir into dry ingredients just until moistened. Fold in chocolate chips.
Step 4
Fill greased muffin cups 2/3 full. Bake at 375 for 20-23 minutes or until muffins test done. Cool for five minutes before removing from pan.
Step 5
Spread espresso topping over each muffin.
