Red Wine Chorizo Tapas

Instructions

Step 1
This requires a bit of marinade time but is well worth the wait!
Step 2
-Pierce the whole Chorizo all over with a fork, place onto a pan with the red wine, bring to the boil then simmer 15min
Step 3
-Transfer to a bowl cool and marinade in the fridge for 8hrs or overnight
Step 4
-Remove the Chorizo from the Wine, reserving the wine
Step 5
-Remove the outer skin from the Chorizo and slice
Step 6
- Fry the Chorizo with the Brandy, flambé if you dare or simply let it reduce then add the reserved red wine and cook on a high heat until most of the wine has reduced.
Step 7
- Serve with a sprinkling of fresh Parsley and some crusty bread for mopping!
