Instructions

Step 1
Heat the olive oil in a large frying pan over medium heat. Add the onion, red pepper, green bell pepper, and garlic to the pan. Cook until the vegetables are tender, about 5 minutes.
Step 2
In a large saucepan add the potatoes, passata, chickpeas, paprika, cumin, tumeric, salt, and black pepper. Cook for 5 minutes on a medium heat.
Step 3
Add the vegetables from the frying pan. to the saucepan.
Step 4
Reuse the frying pan, to brown the sliced chorizo over medium heat until crispy. Once browned and crispy add the chorizo to the saucepan with the vegetables.
Step 5
Pour the stock over the casserole.
Step 6
Cover the saucepan with a lid and simmer for 30 minutes on a low heat, stirring occasionally.
Step 7
Remove from the oven and let the casserole rest for a few minutes before serving.
