Pea and Mint Soup
This soup is quick to prepare and can be made with fresh or frozen peas.

Instructions
Step 1
Measure 750ml of boiling water into the measuring jug. Crumble in the stock cube and stir until dissolved.

2. Wash the fresh mint and chop finely.
Step 3
3. Put the peas in the saucepan and add the stock.
Step 4
4. Bring to the boil, reduce the heat, stir and simmer for 3 minutes.
Step 5
5. Take off the heat and add the mint.
Step 6
6. Carefully blend the soup until smooth.
Step 7
7. Add black pepper to taste (if using).
Step 8
8. Serve with 5ml spoon of reduced-fat crème fraîche or low-fat natural yoghurt (optional).
