Step 1
In a large bowl combine the flour, yeast, salt and maple syrup

Add in the warm water (should be just above body temp)

Mix well with a spatula or wooden spoon

Kneed the dough for about 5 mins

Leave it in the bowl and cover with cling film

Let the dough rise for about an hour or half an hour in a warm environment

Once risen, separate the dough into 4 pieces

Roll out each piece into a long strip and for a pretzel shape (stretch it out alot as they will double)

Cover and Leave the pretzels to double in size

In a bowl add the baking soda to some boiling hot water

Dip each pretzel into the water for 20seconds

Remove and place onto a baking pan lined with baking paper

Lightly brush the pretzels with some egg (beaten)

Bake for 15mins at 180C

Combine the sweetener and cinnamon in a flat plate

Brush each pretzel with some egg white
