Instructions

Step 1
In a large cast iron skillet or other oven proof skillet, cook sausage over medium heat until no longer pink. Remove and set aside. In the same skillet, cook the bacon over medium heat until crisp. Use slotted spoon, transfer to paper towels, drain, reserving 2 Tbsp of drippings.
Step 2
In drippings, saute potatoes and onions until tender. In a large bowl, whisk eggs, parsley, salt and pepper. Return sausage to skillet, top with egg mixture.
Step 3
Cover and cook over low heat until eggs are almost set, 8 to 10 minutes. Uncover and broil 6 in. from heat until eggs are set, about 2 minutes. Cut onto wedges.
