Instructions
Preheat oven to 375F
Step 1
Cut off top 1/2” of peppers; discard with membranes & seeds.
Step 2
Boil med. pot of water; immerse peppers (3 min.). Carefully remove peppers; place on paper towel. Sprinkle insides with pinch salt; invert on paper towels to drain well.
Step 3
Heat oil in 10” skillet; add onions & cook (2 min.), stirring occasionally. Add garlic; cook (1 min. more.) Add ground meat, cooking until browned. Stir in basil, oregano, salt, & pepper.
Step 4
Pour in diced tomatoes along with their juices; bring to boil. Reduce heat; simmer (5 min.) Stir in spinach. Rmove from heat; stir in cheese.
Step 5
Fill pepper cavities with ground turkey mixture, standing peppers in greased baking dish. Cover dish with aluminum foil; bake (15 min.)
Step 6
USE OTHER LEFTOVERS: Substitute/add in vegetables you already have on hand. Canned beans & cooked chicken make excellent additions.
