A simple but delicious salmon recipe! I love purple sweet potatoes, and they complement the salty miso sauce perfectly in this recipe. *Note: I measured with my heart for the olive oil and miso mixtures, so use the measurements as a guideline*

Instructions
Purple Sweet Potatoes and Green Beans
Step 1
Preheat your oven to 400 °F.

Step 2
Mix together olive oil, 2 gloves of grated garlic, and your seasonings of choice.
Step 3
Spread the potatoes (diced into bite-sized pieces) and green beans in an even layer on a sheet pan. Evenly coat the potatoes and green beans with olive oil mixture.

Step 4
Roast in the oven for 15 minutes.

Salmon
Step 5
While the veggies are in the oven, mix together grated ginger, miso paste, soy sauce, sesame oil, and honey. Add water a teaspoon at a time for a sauce consistency, if desired.

Step 6
Remove salmon skin (optional). Pat dry and place into a baking dish. Pour miso marinade over salmon.

Step 7
Remove the veggies if the green beans are cooked through and the potatoes are fork tender, or keep them in the oven for 5 more minutes while the salmon bakes if you want them - more roasted? roastier? more tender?

Step 8
Raise the oven temperature to 425 °F, and cook the salmon filets for 15 minutes (or until fully cooked).

Step 9
Use the leftover marinade in the salmon dish as a sauce. Enjoy!
