Instructions
Step 1
Place oil vinegar, sugar, and both mustards in blender and blend until medium-thick sauce forms. (Can be made one day ahead and refrigerated.)
Step 2
Preheat oven to 375 deg.
Step 3
Lightly grease 13" x 9" baking dish.
Step 4
Arrange salmon in dish with skin side down.
Step 5
Season with dried thyme, salt, & pepper.
Step 6
Spread mustard sauce over fillets.
Step 7
Sprinkle breadcrumbs onto fish.
Step 8
Sprinkle paprika on top.
Step 9
Bake until cooked through and crumb topping is crisp and golden brown (approx. 17 minutes).
Step 10
(Take care not to overcook!)
Step 11
Use 1 or 2 large spatulas to transfer salmon to platter without breaking
