Ingredients
4 servings
Marinade
⅓ cupfresh cranberries
2 tablespoonsolive oil
or avocado oil
2 tablespoonscoconut aminos
or soy sauce
2 tablespoonsmaple syrup
3 clovesgarlic
1 teaspoonfresh rosemary leaves
¼ cupdry white wine
For the Chicken
3 poundschicken thighs
bone-in, skin-on
1 tablespoonolive oil
or avocado oil
salt
to taste
½ cupfresh cranberries
4 sprigsfresh rosemary
plus more for garnish, if desired
For the carrots
For the potatoes
Instructions
Step 1
Combine all marinade ingredients in food processor or blender and process until smooth
Step 2
Put the marinade on the chicken and let it rest in the fridge for 30 minutes or overnight
Step 3
Put chicken in the oven for 30 - 40 minutes and 400 degrees
Step 4
For the carrots mix all the ingredients together and put in the oven 15 minutes before chicken is done
Step 5
For the mashed potatoes mix salt, pepper and fresh nutmeg together, everything to taste, and top it off with roasted onions
