Step 1
Prep time 20 minutes Cook time 15-20 minutes Total time 40 minutes
Step 2
Preheat your oven to 375 degrees.
Step 3
In a food processer with the grater attachment shred up one stick of butter.
Step 4
Now with a different mixing attachment pulse your flour in with the butter. (you should have crumbly pieces of flour)
Step 5
In a large bowl add your flour-butter mixture with sugar, baking powder, baking soda, salt, and poppyseeds.
Step 6
Whisk together.
Step 7
Create a well at the bottom of the dry , then pour in your milk, vanilla, lemon juice, and lemon zest.
Step 8
Mix well to combine with a spatula.
Step 9
On a parchment-lined baking sheet spoon out your batter with 2-inch spacing then smooth out with the back of the spoon.
Step 10
Pop into the oven for 15-20 minutes until golden brown and smells amazing.
Step 11
Let your scones cool completely on a parchment-underlined wire rack.
Step 12
To make the frosting in a small bowl mix together powdered sugar and lemon juice.
Step 13
Once your scones have cooled completely drizzle your icing over top. Let dry completely.
