Step 1
Add bread flour into a bowl.
Step 2
Next, add in the chopped parsley and salt, then give it a mix.
Step 3
Next, add in the yeast and mix again.
Step 4
If you are using a stand mixer, add the water to the bowl along with the oil and set away on a low spin.
Step 5
Gradually add in the flour mixture, a spoonful at a time, once all the flour is in the bowl mix on medium speed for a minimum of 10 minutes.
Step 6
Remove the dough from the bowl and form it into a nice firm ball. If you gently press the surface of the dough ball, it should bounce back this shows that the dough has been kneaded enough. Add the dough ball into a greased bowl and cover it with plastic wrap and leave it in a warm place for an hour to rise.
Step 7
After an hour, the dough should’ve doubled in size, Remove the dough from the bowl and knead the dough to remove all the air. Now divide the dough into 6 pieces and form them into round balls.
Step 8
Place the balls onto a baking tray, spacing them out evenly as they will spread out and touch each other when in the oven. Press down on each ball to create disc shapes dust on the top of each bread bun with some flour and cover the tray with a tea towel and place back in the warm place for another hour.
Step 9
After the hour, they should have risen again, brush the tops of the buns with some milk sprinkle on a few sesame seeds and place them in a preheated oven at 180° for 15 to 20 minutes. After 20 minutes, remove the bread rolls from the oven and place them on a cooling rack.
Step 10
Bring to a boil a large pan of water and add a tsp of salt. Now add in the spaghetti.
Step 11
In a large saute pan add the butter and then the pancetta. Once the butter has melted add in a smashed garlic clove, and stir until the pancetta is crispy. Remove the garlic clove from the pan and discard.
Step 12
Add the spaghetti straight from the pan (do not drain )into the pan with the pancetta, season with salt and mix with well the butter and pancetta then turn off the heat.
Step 13
In a bowl crack in 2 eggs and add in the grated parmesan then mix. Now pour the egg mixture over the spaghetti and mix well.
Step 14
Cover a small board or plate with plastic wrap and place 2 food rings on it.
Step 15
Fill the rings with the carbonara and press down.
Step 16
Sprinkle the tops with more grated parmesan and place them in a freezer for around 20 mins or until firm.
Step 17
Crack an egg into a bowl and mix. Add the bread crumbs onto a flat plate.
Step 18
Heat a pan with oil to 170° for deep frying.
Step 19

Gently tap off the excess breadcrumbs and then place them into the hot oil using a spatula or tongs. Cook until golden brown which should be around 2 minutes, then remove and place onto kitchen paper to drain.
Step 21
To serve.
Step 22
Slice a bun in half and spread some mayo on both slices of the bun, add some lettuce and a slice of tomato then the carbonara burger. Now top with onion and the cheese slice, add on the top of the bun lick you're lips and enjoy.
