Instructions
Step 1
Heat oil in pan and fry onions, garlic and celery for 5 mins until soft
Step 2
Add rice and turn up heat, cooking for 1 min until transparent
Step 3
Add wine and stir until all wine is absorbed by the rice
Step 4
Add a ladle full of stock and season
Step 5
Turn heat down and simmer
Step 6
Continue adding stock a ladle at a time, allowing the rice to absorb before adding more. This should take around 15 mins
Step 7
Stir in the cheese
Step 8
Remove from heat and season
Step 9
Beat in butter and parmesan
Step 10
Rest for 2-3 mins before serving
