Ingredients

Potato-Crab Cakes
1 cuppotatoes
mashed, with added milk and butter
1egg
beaten
1 tablespoondry bread crumbs
divided
1 tablespoononion
finely chopped
1 tablespoonfresh parsley
minced
½ teaspoonlime juice
⅛ teaspoonsalt
⅛ teaspoonpepper
1 poundfresh crabmeat
¼ cupall-purpose flour
oil
for deep-fat frying
Lime Butter
Instructions
Step 1
In a large bowl, combine the potatoes, egg, 1 tablespoon bead crumbs, onion, parsley, lime juice, salt and pepper. Gently stir in crab and shape into 12 patties
Step 2
In a shallow bowl, combine flour and remaining bread crumbs. Coat patties with crumb mixture
Step 3
In an electric skillet, heat 1/4 inch of oil to 375º
Step 4
Fry crab cakes, a few at a time, for 2-3 minutes on each side or until golden brown. Drain on paper towels
Step 5
Combine the butter, lime juice and peel. Serve with crab cakes
