✨ Vegan Mapo Tofu ✨
Mapo adds the perfect kind of heat and spice that Sichuan peppers are best known for! The tang, the spice and the soft and luscious tofu come together just beautifully!
Recipe:
- 450 grams tofu
- 2 tbsp oil
- 1 tbsp chopped ginger
- 2 tbsp chopped garlic
- 1 cup chopped shiitake mushrooms, fresh or rehydrated
- 1 tsp toasted sichuan peppercorn powder
- 2 tbsp gochujang / red chilli paste
- 2 tbsp chilli bean paste
- 1 tbsp light soy sauce
- 1 tbsp shoaxing cooking wine/ vinegar
- 1 tbsp sugar
- 4 tbsp corn flour slurry
- 2 tbsp green onions chopped
🌶 Immserse the tofu is boiling soft water to season it well and keep it soft!
🌶 Sichuan peppers are extremely essential for this recipe. In case you don’t have them, use chilli flakes. For best results, toast the Sichuan peppers, toast it, grind it and seive it before use!
🌶 This dish is authentically made with beef, we’re replacing it with tofu. You can also make use of potatoes, button mushrooms and more!
