Ingredients

1 lbcauliflower
¼ cupsour cream
1garlic clove
minced
¾ cupmayonnaise
1 Tbspdijon mustard
1 tspfennel seeds
or dried dill
salt
ground black pepper
1.5 lbsground beef
or ground turkey
1yellow onion
finely chopped
½ cupshredded Parmesan cheese
1 Tbsptomato paste
1 Tbspitalian seasoning
½ cupcheddar cheese
sliced
1 Tbspbutter
melted
1garlic clove
minced
salt
ground black pepper
Instructions
Step 1
Preheat the oven to 430°F (225°C)
Step 2
Mix all the ingredients for the meatballs (starting at the ground beef), except the cheddar cheese. Combine well.
Step 3
Grease a muffin tray with butter. Divide the meat equally and roll into balls, placing in muffin wells. Bake in the oven for 15 minutes.
Step 4
Remove meatballs from oven and top with cheddar slices. Bake for another 5 minutes.
Step 5
Chop the cauliflower into chunks, then slice thinly, preferably with a mandolin or a food processor. The thinner the better.
Step 6
In a large bowl, combine the rest of the ingredients for the cauliflower slaw. Add the cauliflower and mix well.
Step 7
***Tip*** This recipe makes three meatballs each for four people.
