Step 1
Mix water, instant yeast, and sugar in a small bowl and set aside for 10 minutes

While yeast mixture is activating, add bread flour and salt in a large mixing bowl. Mix until mixed

Pour yeast mixture into bowl with flour. Mix with dough hook for 3-4 minutes

Take dough and place in lightly oil greased bowl. Put cling wrap or a damp kitchen towel over the bowl and let rest for 1 hour.

With 5 or so minutes left, preheat oven to 425°F and boil a large pot of water filled half way. (Optional, whisk in 1-2 teaspoons of baking soda and a tablespoon of honey)

Take dough out and cut into 8 equal pieces (for mini bagels, cut into 16 equal pieces). Each piece should weigh about 103-104g.

Roll each piece into a tight ball on an unfloured surface. Let rest for 10 minutes covered.

Take your thumb and index finger to pinch a hole in the middle of each ball.

Put dough rings into boiling water for 1-1:30 minutes. The longer you leave in, the more chewy they will be. Flip dough rings and leave in for another :30-1:00 minute. Put boiled dough rings on a sheet with parchment paper

crack an egg in a small bowl with a splash of water. whisk together. brush each ring with egg wash.

apply seasonings! My favorite is everything bagel seasoning, but feel free to put poppy seed or sesame seed (or whatever you like!)

Put bagels in the oven for 20 minutes
