Steak loaded baked potato

I always season and measure with the heart so I don't have exact measurements for this recipe, please season to taste 🫶🏼

Instructions

Step 1
Scrub/wash your potatoes really good and then rub the potatoes with olive oil and season with salt and black pepper. Place the potatoes in the air fryer basket and cook at 400˚F for 1 hour. ( cooking time depends on how big the potatoes are) you’ll know your potatoes are cooked through once a knife easily pierces through the center
Step 2
Carefully cut off the top of the cooked potatoes (lengthwise) and then using a spoon, scoop out the insides into a bowl. Then add in chopped scallions, chopped parsley, salt/black pepper/ garlic powder/ paprika (season to taste) , chopped beef bacon (cooked), steamed broccoli, Parmesan cheese, cheddar cheese, heavy cream, sour cream and mash until smooth. Spoon the potato mixture back into the potato shells, top with cheddar cheese, and place back in the air fryer for 10-15 minutes until hot and the cheese is melted
Step 3
Steak bites: In a large skillet over medium high heat, heat 2 tablespoons olive oil. Add your seasoned steak ( seasonings used : black pepper, salt, garlic powder, cajun seasoning) and cook for 2-3 minutes on each side. I like to remove the steak mid way, add it to a cutting board and chop into small bite sized pieces. Then I'll add it back to the pan, add chopped parsley, minced garlic, butter and cook for an additional 3 minutes or to your liking. Remove the steak bites from the pan and allow them to rest for 10 minutes
Step 4
Creamy cheesy cajun sauce: In large skillet add butter and stir in minced garlic. Then you will pour in your heavy cream, cajun seasoning of your choice, salt/ black pepper, squeeze of lemon & chopped parsley. Make sure to taste and adjust seasoning as needed. Don't forget to add lots of shredded Parmesan cheese! (Optional: add shredded cheddar cheese if you like it real cheesy)
Step 5
Top the baked potatoes with your steak bites and pour the creamy cajun sauce on top. Garnish with chopped chives and serve immediately 🤎
